Spinach Pasta

  
Spinach Pasta

This was my dinner day before yesterday. Cooking dinner on weekdays sometime feels challenging. Not that I don't get time, but I don't feel like doing that after getting back home. So to avoid making Indian food I thought why not just make something quick and spinach pasta was the outcome.

Ingredients:
1. Spinach (1/2 bag, around 6 ounce)
2. Pasta
3. Cheese
4. Salt
5. Black pepper
6. Olive oil
7. Turmeric
8. Parsley (optional)

Preparation:
1. Keep the pasta to boil in water with 1/2 teaspoon salt. Boil for around 8-10 min or until it looks soft and cooked
2. In a non-stick pan heat 2 tablespoon olive oil.
3. Add the finely chopped spinach in the pan and let it cook for few minutes.
4. Add turmeric, black pepper, salt according to taste to it.
5. Add 1/2 small bowl of mozzarella cheese to it.
6. Strain the pasta and add to this.
7. Add chopped parsley to it.
8. Cook for few minutes and serve hot.
9. Add some Parmesan cheese on top.
