Tom Yum Vegetarian Soup

Tom Yum Soup

I went to Trader Joe's just before lunch to finish up some grocery mostly because I am usually very lazy on a Sunday afternoon so I thought why not just end this task quickly before Lunch. I always end up buying things which I did not have on my list. This time I bought some carrots and mushrooms. It had been long since I made something of mushrooms at home.

Started thinking what to make for lunch. My mind wandered from Sambhar to Pav-bhaji type bhaji to making some lasagne. Given that my tongue was asking me to serve it something delicious, I thought why not do some trick and give it some hot and sour soup which it loves. I really love this Tom Yum soup at a Thai restaurant in Palo Alto - Krung Siam Thai.So I tried to make that same soup but ofcourse with the limited ingredients I had available at home today. Here is my recipe (ofcourse its missing the main ingredients - lime leaves, lemongrass, galangal):

Ingredients:
1. Cut mushrooms
2. Small cut carrots
3. Cut tomatoes
4. Green chilli
5. Ginger
6. Red chilli powder
7. Square cut tofu pieces
8. Curry powder
9. Salt
10. Coriander leaves


Preparation:
1. Put water to boil.
2. Add some minced ginger and cut/minced green chillies in it and let them boil. (Add lemongrass, galangal at this stage in water)
3. Add some red chilli powder to the stock. There is no need to add oil, but I added few drops of olive oil.
4. Add the cut mushrooms, carrots to it. You can add other available vegetables like baby corn etc. I also added some small cut kale leaves.
5. Add salt according to your taste. 
6. I added some ready made Indian curry powder (very small quantity, not even half tsp).
7. Let this mix boil for some time so that the vegetables get tender.
8. Add the cut tomatoes and tofu to this. 
9. Add around 3 tablespoon of lime juice on top.
10. Garnish with Coriander leaves in the bowls.
